
For twenty years, he oversaw the management of domestic and international Wendy’s restaurants, and retired as Vice President of Minority Franchising at Wendy’s International, Inc. Totaling seven locations, he eventually sold his restaurant chain, and shortly thereafter joined the Wendy’s Corporation. After leaving Jewel, he successfully opened his own chain of restaurants.

Shortly after he was discharged from military service, he took a position with Jewel Food Companies and for over 18 years, he managed supermarkets, restaurants, and ice cream and candy plants. At a young age, he worked in his father’s food market. Gilles always worked in the food industry. After completing training at The Officer Training School, Quantico, VA, he was commissioned as a 1st Lieutenant in the Marine Corps and assigned to the 2nd Tank Battalion at Camp Lejeune. Gilles was fortunate enough to attend both LaSalle Academy and Notre Dame where he was molded into a respectful, caring and thoughtful man who developed an unwavering moral compass that guided him through the rest of his life. He was very proud to be the first of now three generations of Gallants to graduate from Notre Dame. In 1952, he graduated from LaSalle Academy, Providence RI, and went on to graduate from the University of Notre Dame in 1956. Gilles was born in Woonsocket, Rhode Island, on May 28, 1933, to parents Edward Gallant and Lorette Berard Gallant.


He was preceded in death by his granddaughter, Katie Horton. He is survived by his wife of 66 years, Alice (Barrette) Gallant daughter, Anne-Marie Davee and her husband, Rick son, Mark Gallant and his wife Maureen daughter, Adele Horton son, Gregg Gallant and his wife, Lori as well as grandchildren, Geoffrey and Jonathan Gallant, Brooke and her husband Chris Gebhardt, Jocelyn Davee, Gilles Horton, Alex, Griffin, and Victoria Gallant and great-grandchildren, Easton Parr, and Bryant and Zoe Alice Gebhardt. He was 88 years old.Īlthough he was diagnosed with dementia in 2011, he and Alice kept a positive attitude and continued to enjoy a special and loving time together. Gallant passed away peacefully with his best friend and wife, Alice Gallant, by his side.
